Simply Muslim Mom’s Simple Thanksgiving Meal

We celebrated a simple Thanksgiving day at simplymuslimmom home. What exactly do we celebrate? We celebrate all the blessings from Allah(swt). Some years we exchange gifts, this year was not one of them.

I had to do little bit of planning to pull off a Thanksgiving meal this year because our fridge is not working for almost a week now. We are making do while waiting for the new fridge to arrive soon insha Allah. So there was no buying ahead to save time or marinating chicken overnight to add extra flavor. But everything turned out really well alhamdulillah- considering I tried not one but two brand new recipes for this meal.

So what did our Thanksgiving meal include?

Spicy Roasted Chicken-

I developed this recipe after looking at a number of recipes on allrecipes.com aka my go to place for new recipes. The result was a juicy, spicy (not hot) chicken. The beautiful color is from turmeric, Hungarian paprika and butter. It took me 5 minutes to prep and the chicken was a hit with everyone. Needless to say it’s a keeper and will be repeated to make easy but oh so good meals insha Allah.

Biscuits-

I made lots of biscuits to go with the chicken. The recipe is from my dear friend Kitty and I have been using this recipe for over 10 years now. The secret ingredients for these biscuits are butter, self rising flour and buttermilk. These are really good, soft biscuits that reheat really well if you are lucky enough to have any leftovers.

Apple Pie-

This is another winner from allrecipes.com. We loved the pie- just the right amount of everything- moist and flavorful apples, thick, sweet sauce from the apples and flaky, golden puff pasty to keep everything together. The pie was served with homemade whipped cream.

I was tempted to make potato latke or a side of vegetables to go with the chicken but decided not to overextend myself as that tends to make an exhausted and eventually cross mama. It’s good to know when to stop.
